Nancy Leszczynski, NYU Florence Professor, gives an illustrated account of traditional Tuscan agricultural practice.

The Greens We Eat
Italy is famous the world over for its rich culinary heritage, part of a wider Mediterranean diet that has become synonymous with healthy eating, a fact that this program aims to celebrate, scrutinize and contrast with the impact on the environment. The program consists not only of a series of lectures and demonstrations but, also, the chance to grow the vital Tuscan ingredients needed to cook their own end of program dinner.
